The wastewater generated from kitchen operations are finally taken to a water treatment plant, but grease is something which hinders the operations of the WTP as it slows down the reactions in the reactor by causing a thick film over the reactor's water and doesn’t break and get digested easily. Due to this the Pollution control boards or municipal authorities levy heavy fines on those establishments which are continuously passing oil and grease in the sewage system.
Therefore it's been made mandatory in many cities to install & use grease traps at kitchen locations of commercial food preparation facilities.
